Husks are sapients that have undergone transformation into robo-organic 'zombies'. Widespread galactic awareness of husks first came when the geth started to deployDragon's Teeth to convert people into husks during their incursions into civilized space, but rumors of so-called 'machine cults' that produced similar creatures have existed for centuries. Husks are created through the injection of a nanovirus into the bloodstream of victims - there appear to be varying results depending on the species of the victim as well as the strain of the nanovirus.
